Simple Blueberry Cupcakes with Cream Cheese Frosting

1 white cake mix
1 cup fresh or frozen blueberries, thawed

Pre-Heat oven at 350 degrees

Follow the directions on the back of the cake mix box but use the directions for just egg whites only not whole egg, add in your blueberries and fold into batter.

*Tip* don’t mix in the blueberries into your cake batter, make sure you fold it in so that way the blueberries will stay in one piece.

Line (2) 12 cupcake pan with cupcake liners and fill equally between the two pans and bake for 20-25 minutes or until toothpick comes out clean. Let cupcakes cool before frosting.

Cream Cheese Frosting:

1 (8 oz) cream cheese, softened 
1 stick unsalted butter, softened 
1 1/2 cup powder sugar
2 tsp. vanilla extract
1/2 cup blueberries, to top cupcakes

Mix cream cheese, butter, powder sugar and vanilla with an electric hand mixer for at least 2 minutes or until smooth. Now with a pastry bag you’re going to cut a small hole in the bottom of the bag just enough to fit a 2 inch decorating nozzle into the bottom of the bag and make a pretty twirl on the top of your cupcakes and top with 2-3 blueberries and chill for 30 minutes before serving. Enjoy
